Low and Slow Ribs Episode Featuring the new Weber Performer

I got my boyfriend the Weber Performer for his birthday and we finally got the chance to christen it now the weather has cleared up. We decided to cook low and slow pork ribs, cheese and bacon chicken wings and home made crunchy fries.

We woke up early Sunday morning, excited as if it were Christmas morning, just to start up the BBQ. The Weber Performer has a ‘Touch-N-Go’ feature which uses gas to ignite coal at the push of a button . I now call it magic. No more fire starters. No more inconsistent coal temperature, no more wasted time guessing how long till the coals heat up. Just use the gas ignition for 5 minutes, and then let your coal heat up for around another 10mins and you’re ready to go. My bacon sense are telling me I’ll be having BBQ’s more often this summer.

My Bf does all the cooking on the BBQ… I wondering if I should start calling him BBQ Boy?

He asked the butcher to cut the ribs in to small piece so we end up with jerky type rib pieces. It ended up taking 8 hours to cook at about 125-150 C for a low and slow approach.

From memory our spice rub marinade consisted of cayenne pepper, paprika, garlic and onion powder, dried basil, chilli powder mustard powder, salt and black pepper.

In the last couple of hours of cooking, we started to base of ribs with a special BBQ rib sauce and in the last half hour we smothered the ribs with a layer of honey.

The crust of the meat was jerky like, the inside was tender, and the sauce was sticky, icking, finger licking good.

I just had to take a picture of these glistening smoked bacon strips which have been flavouring the chicken wings on the BBQ. We needed to chop these into bits and scatter them on top of the chicken wings with some cheese. However half the bacon may or may not have been eaten in the process.

We actually found american buffalo wing sauce at our local IGA. We mixed the buffalo sauce with butter for dipping the wings into as suggested.

My contribution for the day was a side. I went for french fries and wanted to make them from scratch to be fancy smancy.

I followed the video on youtube forĀ Heston’s recipe for the chips, but altered the timing as his chips are thick and my french fries and thin and crispy. I brought 3kg of potatoes and there was not a single french fry left over.

Cooking Mama China whipped up a side salad within minutes. Rocket, tomatos and bocconcini with a balsamic dressing.

Yes we used thali plates to mix things up a bit. Ribs, wings and chips is probably one of the best meals ever.

Dessert was provide be Foodie Cravings and she made macarons! The macaron was delicious and the chocolate filling was addictive. I’m glad they turned out bigger then expected ; ) I was pleasently surprised to find out they were made from the Donna Hay Macaron Mix!

The second dessert was a Flake Cheesecake.

Homemade Coal BBQ Pizza Episode

It’s only fitting that my first post should feature something delicious, fun and full of bacon bits. It’s Labour Day long weekend so there isn’t a better time to whip out the mini Weber BBQ and try something different. I decided to redeem my Barbecues Galore voucher and bought a pizza stone and spatula set for $39.

The Pizza dough could have been better as I had misread the recipe and did not have enough semolina flour nor the resting time for the dough. It did not have those crispy bubble bursts throughout the crust as I would have liked to have achieve. Having said that, everyone enjoyed the flavours of the dough and the smokiness of the coal plus hickory wood which made up for the texture.

You can see the smokiness of the coal and hickory wood which was amazing. This was a Chicken and Bacon pizza with Mushroom Sauce and BBQ Sauce Swirl.

I felt like being creative and made a dessert pizza in the shape of a love heart. By the time I took the photo the ice cream had melted and it makes the pizza look a bit sad. It was indeed a happy pizza as we were all very happy to eat it.
